Recipe of the Week

I am trying very hard to keep up with the weekly recipes, but it gets hard to find good ones!!

This week I tried to think up something on my own and I came up with:

Chicken and Mushroom Ravioli

Every time I go grocery shopping, I always stop by the little fridge that has the fresh ravioli pastas. I finally decided to buy a package of Monterey ravioli, and was really excited to try it!

Monterey Ravioli

I wasn’t really sure what to make but I grabbed some things out of the fridge and this is what I came up with:



  • 3 Chicken Breasts
  • 3 cloves of fresh garlic
  • Mushrooms
  • Spaghetti Sauce
  • Monterey Ravioli
  • Cooking spray/Olive Oil
First I boiled water and cooked the pasta according to the directions. (Which I found out was way too long to cook ravioli cause the filling fell out of most of them! :(  If you decided to buy them, cook them less time than the package says, you will be able to tell when they are done!) Then I just chopped up the garlic and sautéed it with the mushrooms in a saucepan. When the mushrooms were fragrant and soft, I emptied them into a bowl and set aside. Then, I cut up the chicken into strips and added them to the pan. I cooked them until they were no longer pink, in a little bit of olive oil. I added the mushrooms and the sauce and stirred until it was hot.

Cook my sauce....cooooook!

The dish turned out so good!! I liked the big chucks of chicken, and thought it worked really well with the ravioli! I only wish I had more ravioli’s to soak up all the sauce…but I ended up slurping it up anyways! :)

I would definitely make this again! I love ravioli! I need to buy it more often at the store!! Yummy!
