Last night I discovered something amazing. Meal Prepping.
I’ve always tried my hand at meal planning, creating spreadsheets of meals for the week to bring to work and spending way too much time on them.
Most of the time, the spreadsheet just got lost in my documents and I made up lunches as I went. And that was if I even had time to prepare them. Usually I forgot to pack it the night before and was left scrambling in the morning to pack something, anything, which usually resulted in me bringing a random mix of items that didn’t go together — like a can of tuna, bag of lettuce and a whole jar of peanut butter.
So, last night, I not only meal planned, I meal prepped. I always read about others prepping their meals in the beginning of the week to save time and stick to a healthy diet during the week, but it always seemed like so much work. Packing all those containers and cooking everything all at once seemed like a hassle.
It was a cinch! I had some items that worked perfectly on hand from our grocery shop last weekend and I was able to cook it all at once last night before dinner.
Tomato-Basil Chicken Sausage, Brown Rice, and Broccoli. And I even portioned the meal out to be approximately 300 calories.
It just looks pretty too!
Stack ’em up and put them in the fridge and I have a perfectly portioned meal to grab and go in the morning.
It was so easy, and now I have lunch for the rest of the week. One day of prep work for more time during the week nights is so worth it! And knowing that I have lunch ready every morning when I leave for work makes eating healthy a breeze. I am definitely going to try and keep this up! I’m excited to see what other meal combos I can come up with!
