This holiday I found a really neat idea for a colorful recipe to celebrate Independence Day out in the hot sun.
Refreshing Sangria Popsicles!
1 cup hot water
1/3 cup sugar
1 cup chilled white wine such as Pinot Grigio
1 tablespoon orange-flavored liqueur
4 teaspoons fresh lemon juice
1 cup fresh berries, such as blueberries and thinly sliced strawberries
This recipe was super simple to make. All you do is dissolve the sugar in the hot water, mix together with the remaining ingredients and portion the liquid out into 7 paper cups with the fresh fruit on the bottom. Cover each with tin foil and stick in the popsicle sticks. Then freeze them over night.
I made some modifications to the recipe by using Splenda instead of sugar and rum instead of the orange-flavored liqueur, because that is what we had on hand.
The popsicles were really fun to make and they looked so festive for the holiday. The only mistake I made on these was putting in way too much Splenda. It is so much more concentrated than normal sugar and even though I still used less than the amount listed in the ingredients, I definitely should have been more conscious of the correct Splenda to sugar ratio.
Out by the pool, though, I really enjoyed the frozen fruit and refreshing flavor once I got over the initial sweetness. I would make them again for a BBQ for sure!
