It’s just me and the kids this week while Daddy is out in the field for work, finishing up some important trips before the end of the year.
During the week when he is home, Brett usually starts up dinner since he is always home before me. And especially when I go to the gym after work, I get home pretty late. He really enjoys cooking – in return I do the dishes – so he doesn’t mind most of the time. And I certainly don’t mind because has is an AMAZING chef!
There is always so much to do and so little time when I get home, and fitting in a workout is always tough while Brett is away. Especially with the time change now, it is dark by the time I get home, so I can’t even go for a walk with Rylee and Win. I haven’t quite figured out how to make it to the gym or fit in a workout while Brett’s away yet, so I just go straight home and give all my attention to the kiddos!
Which is completely fine with me, cause look at those faces!
I always say to myself that I will do a little at home workout when Rylee goes to bed, just to fit something in, but by the time Rylee and Win are in bed, I’m exhausted too, and don’t normally have the energy!
So as you can tell, I still have to figure out the best way to fit in a workout when Brett is out of town- but that is not the topic at hand I would like to discuss today.
What I have been trying to figure out is how to cook a delicious, easy, and healthy meal for myself in between caring for the kiddos while Brett is gone. I don’t want to slave away in the kitchen to make something very involved because little Ry has no one to play with and I enjoy time spent with her more than time spent in the kitchen.
So last night, I prepared a delicious meal in under 10 minutes with zero prep! And the best part? I used packaged products that abide by the Real Food Rules, with all natural ingredients and close to only 5 ingredients per item!
Al Fresco Chicken Sausage – Sweet Apple!
They come fully cooked, so all I had to do was brown them up in a pan. And I served them up over a bowl of Seeds of Change Organic Quinoa and Brown Rice medley.
I probably would have added some broccoli to the mix had I had some in the fridge, but because we are almost off for the holidays, we don’t have much fresh produce in there right now.
But the mixture I had last night was so delicious! The sweetness of the apples and maple syrup in the chicken sausage was addicting and it mixed really well with the garlicky taste of the brown rice and quinoa mixture. I am really glad I had enough for two portions cause I would gobble that up again… right now!
Quick and easy meal and I got to spend all night playing with Rylee – teaching her how to walk! For some reason she just does not went to crawl anymore she likes to push up on her feet and can walk when I hold her hands up! Oh man!
Anyways, I’m feeling good this morning!
