I cannot believe that it is already mid-February!
It’s hard to believe that my birthday was this month, it came and went so quickly! I turned 28, not so exciting, so I actually tried to let it slip by unnoticed this year.
Instead of going away on a big trip or out to dinner even, all I wanted was a big gift. I have been needing/wanting a computer for so long so Brett chipped in with me and got me a brand new laptop for my birthday!
Which I actually couldn’t wait till the actual day of my bday so I’ve had it for a while now. I love it!
The day of my birthday started off amazingly with a surprise delivery from Brett of Starbucks Coffee that greeted me when I dropped Rylee off at daycare.
So nice and unexpected!
I ended up getting sick that day and pretty much was not myself the entire rest of the week and throughout the weekend. My parents came up for the weekend and took us out to dinner to celebrate, too. It was so nice to have them even though I wasn’t feeling 100%. The weather was stinky on Saturday though, so it was a perfect day to snuggle up on the couch and watch the Olympics as a family.
Saturday, Brett and I did get to the gym in the morning, though! It is always nice when one of our parents are in town and can watch Ry so we can go together. We did a full body workout, since neither of us had a chance to go very often this past week.
After my parents left on Sunday we went out and ran some errands before the start of the week. It was such a beautiful day that we had to go outside and enjoy the backyard for a while before the sun set.
Because I’m Happy
Although I had a pretty low key birthday (which I am completely fine with) I am feeling so much better now and I’m HaPpY!
The new song Happy by Pharrell is all over the place now and I don’t know about you, but every time I hear it I want to get up and dance down the street! It puts me in the best mood!

Workout & Dinner
Anyways, I really wanted to focus on my workout plan for working moms this week, but Brett is out of town till Thursday, so it’s hard for me to workout when I have so much to do at home while he is gone. I am always so exhausted once Rylee’s in bed that all I want to do is blog a little and relax before going to bed!
I have a plan for getting to the gym and working out while Brett is home to help with Rylee that I am anxious to put into action (see 5 Tips to Help Working Moms Find Time to Workout) but I really need to figure out the best way for me to continue some kind of fitness routine when he is away like this for work. It does happen often, so I need to put a plan in place.
Waking up early in the morning before Rylee wakes up looks like the best option. This morning I actually woke up and got to do the Tone it Up Love Your Legs & Booty workout. I got through as much as I could of it before Rylee woke up. Of course she wakes up earlier than normal when I am trying to get a workout in! I don’t know if I can wake up any earlier, I love sleeping, so we will see if I am able to keep this up.
Even though I didn’t finish the workout, my legs are shaking after and I can tell I am going to be sore! So at least I feel good about getting that in and don’t have to worry about not finishing it.
On another note, I am very proud of the Chicken Stir-fry that I whipped up last night for dinner with items that I had on hand! (Very rare for me!)
It came out so good!
I had a red pepper, broccoli, and green onions on hand that I cut up and sautéed in the wok with a little bit of EVOO. I marinated the chicken for about 45 minutes in some soy sauce, ground ginger and garlic powder, cooked it up until no longer pink and added back in the veggies.
I topped it off with some stir fry sauce and my favorite stir-fry ingredient, peanuts. I LOVE peanuts in my stirfy. They add the best crunch and texture to the dish.
I served it over instant basmati rice. Such an easy, quick and delicious dinner! And healthy too! One good thing about cooking for myself when Brett is gone, is that I can make enough for leftovers for work the next day. I am excited to be eating this dish again.
