A Daylight (Savings) Weekend

This past weekend we got to spend a lot of time outdoors. It was such a beautiful weekend and the perfect one for it!

Saturday morning, we had plans to meet up with my good friend Fabiana and her daughter for a walk on the trail into town.

But not before attending to my motherly duties of baking Skinny Chocolate Chip Banana Muffins from scratch. :)

Rylee was my little helper. Actually, the only thing she helped me do was learn how to mix muffins with one hand!

She was very curious! Every time I show her something new like this, I always envision us cooking or baking in the kitchen together when she is older and she can actually be my little helper.

Ok, back to the muffins. What made these “skinny” muffins was the unsweetened applesauce in place of butter or oil.

I found the recipe on sallysbakingaddiction.com and it was so easy to make! I also pinned it to my Pinterest Page too, to save for another time! :)

The muffins came out delicious and I really couldn’t tell that there was an applesauce substitute. They were actually really chocolatey and rich and tasted more like a dessert than a breakfast muffin.

That didn’t stop us all from having one in the morning before our walk downtown, though!

There was actually a little chill in the air on our way into downtown, but in the sun it was so nice.

The farmers market was bustling like always.

We tried a new place for lunch, too! It is called Savoree and it is a healthy, make-your-own salad/sandwich/quinoa bowl assembly line type restaurants. I got a salmon salad and the dressing was really yummy! Totally forgot to snap a photo, but I will definitely be going back there again, so will be sure to snap one next time.

Because the weather was so gorgeous, we took the girls to a little patch of grass near the market where some other kids were playing and they got to play with each other for a while.

And apparently, Rylee is into eating leaves, now.

Not the most delicious thing to be putting in your mouth, huh? Silly girl!

Sunday was spent adjusting to Daylight Savings Time. For some reason, Rylee woke up earlier than usual, so we actually lost out on more like 2 hours than 1 hour of sleep!

We all ended up taking naps around 10am and after some chores around the house, we were starting to get stir crazy!

It was another beautiful day outside, so what better to do as a family than to take another walk on the trail!

We walked a little passed downtown to a local park this time.

Where Rylee again attempted to eat leaves and even offered me one!

The park was so cute, but was definitely for older kids. There weren’t any swings there, which is pretty much all Rylee can do right now.

But I still let her explore a little. I really wanted her to try out her new shoes we got her, even though she can’t walk on her own yet! Am I making her grow up too fast?

I’ll have to cherish the moments that she crawls for now, cause I hear when she starts to walk, it’s another story!

I still had a great time with her and look forward to when I can take her there in the future! She’ll be walking soon I am sure and will love this little playground!

We had a lovely weekend outdoors and it felt wonderful. Can’t believe it’s Tuesday already!
