Sick Morning Treat

This morning I am unfortunately home with the little bubs because she had a high fever yesterday at daycare. I took her to the doc’s yesterday afternoon and thankfully there is no ear infection or any other signs of something serious. But I have to keep her out of daycare for 24 to ensure that the fever goes down before I can bring her back.

So, I am home monitoring her and working remote today.

To keep Ry in good spirits, I did make her a breakfast treat this morning!

She actually always gets pancakes (or other breakfast carb item) when she goes to daycare, so I guess it’s not that big of a treat for her, but I know she loves it and I wanted to give it to her even though she wasn’t there.

I made her my own version though, healthy whole wheat pancakes. I used the new trick I learned from baking those Chocolate Chip Banana Muffins and swapped out the oil for unsweetened applesauce. I remembered that I found this awesome chart of healthy baking substitutes on Pinterest so I checked it to see how the substitution would work.

I just swapped the required tablespoon of oil for applesauce and I couldn’t even tell the difference!

What, did you think I wouldn’t indulge in these myself?

Of course, I smothered mine in fresh strawberries and drizzled a little bit of 100% pure maple syrup over top.

Now she is napping and I am back to work!

    Fruity pancakes are one of life’s small yet wonderful treasures. I am partial to heavy whipped cream on mine, and even a few chocolate chips with the berries. Love that you used whole wheat!

      Gotta try the chocolate chips IN my pancakes next time!! :) I love adding walnuts too for a good crunch! Gotta hold off on that until the little one can eat nuts, though!
