Cinco de Mayo Run & Healthy Taco

I hope everyone had a great Cinco de Mayo and ate yummy Mexican food!!

Once I got home I headed right out the door for a run with Rylee.

It was such a gorgeous day to run!

Rylee enjoyed it while eating her snacks and eventually took a little snooze on the way back.

Once we got home and she ate and went  down to bed, I was ready to celebrate Cinco de Mayo and I made myself a healthy chicken taco!

I topped it with avocado, tomato, lettuce and onion on a whole wheat tortilla. I made my own taco seasoning too! I used salt, pepper, chili powder, garlic powder, cumin and paprika and coated the chicken in it before sautéing it. It was delish! 

On the side a made a mixture of brown rice and quinoa and black beans.
