Happy Friday! TGIF, seriously!
This week I pretty much ate the same thing every single day!
I have been enjoying a delicious roasted veggie and hummus wrap for lunch and it has been amazing!
For this lunch, I pretty much roasted every veggie that I had in the house:
Green peppers, onions, broccoli, carrots, tomatoes. Green beans? Sure why not!
I packed everything separately and then assembled my wrap at work. I warmed up the veggies in the microwave before loading them into the whole wheat wrap smeared with hummus.
A delicious and healthy lunch!
