Do you want delicious, homemade breakfast sandwiches prepped and ready for the entire week made in less than an hour?
I love waking up in the morning knowing that my breakfast is already made and a delicious, hot breakfast sandwich is always something I look forward to enjoying.
The other day I was craving a hot breakfast and decided to stop by a local deli near work for a sandwich. I realized that they literally assembled the thing in 2 seconds and popped in in the microwave before handing it over to me.
And I thought to myself, “Self, you can do that for less money and with more nutritious ingredients.”
Ding! A lightbulb went off and that weekend I made sure to get the needed ingredients to meal prep some breakfast sammies for the week, including:
- Whole Wheat English Muffins
- Good Cheese from the Deli
- Low Sodium Ham from the Deli
- Tin foil
- Salt & pepper from the pantry
I used one of our cupcake tins to cook the eggs all at once in the oven. I just sprayed with a little Pam, cracked them open in each of the cupcake molds, sprinkled a little salt and pepper and baked in the oven at 350 degrees for 15 minutes.
While they baked, I laid out the tin foil and prepped the English muffins with the cheese and ham.
They were ready and waiting for the eggies!
I let the eggs cool a bit before finishing the assembly so the cheese wouldn’t melt prematurely.
Then I topped off the sandwich and wrapped in tinfoil.
I kept them in the freezer for the week to keep them fresh.
When I prepared these babies in the morning, I cooked them for a majority of the time on defrost. Then nuked them on medium for another 30 seconds and they usually came out perfectly!
These sandwiches turned out to be around $.80-$1.00 each. Pretty good savings compared to the $2.85 sandwich I bought at work AND I know exactly what went into them.
I am already thinking of some interesting combos of this sandwich to try in the future! There are so many possibilities!
