Sweet Balsamic Skirt Steak, Twice Baked Potatoes and Chilled Asparagus, Tomato Salad

Brett and I have been loving our No More To Go subscription and decide this week to go for the full size menu servings of 4, instead of the usual cooking for 2 option.  It’s been working great and we are eating the second portion of the meal the next night so that we don’t need to cook. Some of these recipes can be a little time consuming, but it’s worth the effort the first night in order to be able to relax and not cook anything the next. Instead of cooking we have been going on bike rides or playing outside instead and it has been wonderful!

This week’s featured recipe is a perfect combination of sweet marinated steak, tangy chilled asparagus and tomato salad and a warm, cheesy baked potato that meld so well together.

Let’s start with the cheesy.

Twice Baked Potatoes

Servings: 4


  • 3 potatoes (medium)
  • 1/2 cup sour cream (we used plain Greek yogurt)
  • 1/4 cup milk
  • 2 green onions, sliced
  • 3/4 cups cheddar cheese, grated
  • kosher salt, to taste
  • pepper, to taste

  1. Preheat oven to 350 degrees.
  2. Poke holes in the potatoes with a fork a few time on each side. Microwave potatoes on high for 5-8 minutes or until cooked and tender. 
  3. Let cool until you are able to handle them and carefully cut 2 of the potatoes in half lengthwise.
  4. Using a spoon, hollow out the 4 halves into a bowl. Leave some of the potato attached to the skin for sturdiness.
  5. The third potato will not be stuffed; simply spoon out as much of the insides as possible and add to the bowl.
  6. Add sour cream (or Greek yogurt), milk (a little at a time), and cheese to the bowl. Combine using a potato masher until somewhat smooth.
  7. Add green onions and season with salt and pepper.
  8. Gently spoon mashed potatoes into skins

8. Bake for 20 minutes. Increase heat to broil and brown the tops for 2-3 minutes.

These potatoes were so creamy and hearty and went so well with everything else.

Chilled Asparagus and Tomato Salad

Servings: 4


  • 1 pound asparagus, trimmed
  • 1 cup grape tomatoes, halved
  • 1 shallot, minced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • kosher salt, to taste
  • pepper, to taste
  • 1/4 cup blue cheese, crumbled

  1. In a shallow pan, heat 2 inches of water to a boil. Add asparagus, reduce to simmer and cook for 3-4 minutes or until bright green and crisp. Do not overcook.
  2. Remove from pan and immediately drain and run under cold sink water.
  3. Cut asparagus into 1” pieces and toss with remaining ingredients. Serve room temperature or chilled.

This dish was so easy to make! I’ve never really had chilled asparagus before but the crisp, crunchy and fresh flavor of the parboiled  asparagus was so yummy and this combination of ingredients was delicious.

Sweet Balsamic Skirt Steak

Servings: 4


  • 1 1/2 pounds skirt steak (or flank steak)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons Worcestershire
  • 2 teaspoons brown sugar
  • 2 cloves garlic, pressed
  • kosher salt, to taste
  • pepper, to taste

  1. Combine all but salt and pepper in a resealable bag and let steak marinate for about 30 minutes (if you have time) or as long as you can.
  2. Heat a lightly oiled grill pan or heavy (cast iron) pan over medium high.
  3. Remove steak from bag and discard marinade.
  4. Sprinkle steak with salt and pepper.
  5. When pan is nice and hot, lay steak on the pan and sear on both sides for about 3 minutes per side.
  6. Let steak sit for about 5 minutes and then cut across the grain and serve.

This streak was really easy to make as well and the sweetness of the balsamic marinate with the tangy asparagus salad went so great together. We needed up eating the steak with the salad as one dish it was so yummy!
