Easy and Healthy Weekend Chicken Sandwich

Now here’s a really easy meal to cook for lunch over the weekend or even a weekday night! It’s super yummy and made with all ingredients that we normally have on hand. So on a lazy weekend when we’re tying to use up our fresh ingredients before a grocery shop, this meal is perfect!

Ingredients: 

    • 1 Chicken breast cutlet, seasoned with salt and pepper
    • 1 Whole wheat kaiser roll
    • Fresh sliced tomato
    • Field greens
    • Cheese of choice
    • Dijon Mustard (optional)

We always have chicken breasts on hand, so over the weekend, I grilled up a chicken breast on the grill pan, melted some cheese (I usually go with provolone) and topped it with a freshly sliced tomato and some field greens. I love the way field greens taste on a sandwich! Adds a little something extra tasty and different than most sandwiches you get when eating out. For a little extra flavor, I put on a little Dijon mustard, too.

On the side, I served up some roasted vegetables. I chopped up some left-over veggies we had in the fridge, threw some salt and pepper on top and tossed them in the oven to roast at 400 degrees for about 25-30 mins.

Now that’s a delicious and nutritious weekend meal made at home!
